The parsley, as well, is ready for me to make tabouli. That's more likely in this heat, although the tomatoes are a month out.
I made some tabouli the other day--not quite enough mint, although I substituted some bulb fennel for cucumbers, because I didn't have any cucumbers, and the result was a subtle but delicious difference.
